Why measure in grams?
If you ask any bakery how they measure, most will say they measure in grams. Measuring by weight is more reliable for desserts because some recipes don’t specify if you should pack your ingredients and do not take into account how different people measure their ingredients.
A common mistake people make in measuring ingredients is when measuring brown sugar. Brown sugar is clumpier than normal sugar because it is mixed with molasses. 100 grams of white sugar is equivalent to 100 grams of packed brown sugar—though most people don’t pack their brown sugar the same way, so you will most likely not get the same measurement unless using a scale.
Food scales are such an amazing and cheap investment to make for your kitchen because they will allow you to copy recipes perfectly because they are far more reliable and allow you to not use as many dishes! Click here to order a food scale!
Measurements In Grams:
Chocolate
170 grams chocolate (your choice of milk, semi-sweet, dark, or a mix!)
Filling
113 grams butter
250 grams sugar
3 grams vanilla extract
120 grams all-purpose flour (heat treated)
85 grams chocolate chips
15-30 grams milk (until desired texture)
Kitchen Equipment
Stand mixer with paddle attachment OR medium sized bowl with rubber spatula
2 tbsp cookie scooper
Instructions:
Step 1
In a microwave safe bowl, melt your chocolate in 30-second intervals until fully melted.
Step 2
Using chocolate bar mold, pour half of the chocolate into the mold and spread it evenly along the sides.
Step 3
Place the mold in the freezer and chill for about 20 minutes.
Step 4
While chocolate is chilling, add the butter and sugar to a bowl. Mix for 1-2 minutes until mixture turns a light off-white color. Then stir in the vanilla extract.
Step 5
Add the heat-treated all-purpose flour and mix until a thick, slightly dry dough forms.
Then add the milk and chocolate chips and fold in until the mixture reaches a cookie dough consistency.
Step 6
Take chocolate mold out of the freezer and evenly spread the cookie dough inside. Then pour the remaining chocolate over the cookie dough and return the mold to the freezer to set.
Step 7
Once fully set, slowly remove from mold. Enjoy fresh or store in a chilled environment for up to 14 days!
