Pumpkin Bread Overnight Oats

  • 4 servings

Measurements:

  • 1 & 1/2 cups almond milk

  • 1/2 cup canned pumpkin

  • pinch of salt

  • 6 pitted dates

  • 1 tsp vanilla extract

  • 1/2 tsp cinnamon

  • 1 tsp pumpkin pie spice

  • 2 scoops protein powder (My favorite is koia!)

  • 1 & 1/2 cups old-fashioned oats

Measurements in Grams:

  • 360 grams milk (or water!)

  • 125 grams canned pumpkin

  • pinch of salt

  • 6 pitted dates

  • 1 tsp vanilla extract

  • 1/2 tsp cinnamon

  • 1 tsp pumpkin pie spice

  • 2 scoops (~60g) protein powder (My favorite is koia!)

  • 135 grams old-fashioned oats


Instructions

Step 1

  • In a food processor or blender, combine milk, canned pumpkin, pitted dates, a pinch of salt, vanilla extract, pumpkin pie spice, cinnamon, and protein powder until there are no date chunks.

  • Blend until smooth and no date chunks remain.

Step 2

  • Divide old-fashioned oats in individual jars/containers for meal prep (3-4 servings) or place all oats into one large container.

Step 3

  • Pour the blended pumpkin mixture evenly over the oats.

  • Stir the oats and pumpkin mixture together until fully combined. Cover and refrigerate for at least 2 hours (preferably overnight!).

Step 4

  • Enjoy straight from the fridge, or top with cinnamon, nuts, or pumpkin seeds! Keep refrigerated and eat within 10 days!
