Measurements:

Cookie Dough

  • 1/2 cup butter

  • 1 cup white sugar

  • 1 egg

  • 2 tsp vanilla extract

  • 1/4 tsp almond extract (if you don’t like almond extract in cookies, this is optional)

  • 1/2 tsp salt

  • 1 1/2 cup all purpose flour

  • 1 tbsp milk or water

Step By Step

  • Step 1

    • Preheat oven to convection 350 degrees fahrenheit.

    • Beat room temperature butter in stand mixer/by hand for 3-5 minutes (or until butter turns off-white).

  • Step 2

    • Add in white sugar. Beat the sugar with the butter until the mixture is fluffy (about 2 minutes).

  • Step 3

    • Add your egg and stir into mixture.

    • Mix in vanilla and almond extract.

  • Step 4

    • Add flour to form your dough. If using a stand mixer, mix on low. If mixing by hand, use a spatula.

  • Step 5

    • Add your cookie dough to a parchment paper lined 9x9 square pan.

  • Step 6

    • Bake for 22 - 25 minutes.

    • Cool for 10 minutes before putting in fridge for 25 minutes.

  • Step 7

    • Add your frosting on top and spread with spoon/knife/spatula.

  • Step 8

    • Store in fridge for up to 10 days or at room temperature for 8 days!
