Granola Bars

Serving Size:

  • approximately 12-16 bars

Measurements:

  • 1/2 cup peanut butter

  • 1/3 cup honey

  • 1 tbsp cinnamon

  • 1/4 cup cocoa powder

  • 2 tbsp flax seeds (optional)

  • 1/4 cup peanuts (I used honey roasted)

  • 1 cup fiber one cereal (you can also use rice crispies, etc)

  • 1 1/4 cup old fashioned oats

  • 3/4 cup dates + 2 tbsp honey + 2 tbsp water

  • 2/3 cup chocolate chips

Step By Step

  • Step 1

    • Mix peanut butter and honey together in a bowl or stand mixer.

  • Step 2

    • Using a food processor, blend up your choice of cereal and peanuts, until all chunks seem fairly similar in size.

  • Step 3

    • Add your cereal + peanut mixture into your peanut butter + honey mixture.

    • Measure out flax seed, cinnamon, and cocoa powder and add to bowl as well.

  • Step 4

    • Blend up old-fashioned oats in your food processor until desired consistency (I prefer it to have a few bigger oat pieces, though it’s personal preference).

  • Step 5

    • Add oats into your mixture until fully incorporated.

  • Step 6

    • Lastly, blend up dates + water + honey in your food processor until smooth (may take 1-2 minutes).

    • Add date mixture into your dough.

  • Step 7

    • It’s optional, but you may also add chocolate chips! (I definitely prefer them with chocolate chips)

  • Step 8

    • Using a parchment paper lined 9x9 square pan, add your granola dough in and smoosh until the granola is packed well together.

    • Chill in fridge for 10-15 minutes.

  • Step 9

    • Cut into squares with a metal knife (don’t use plastic it will probably break) and enjoy!

  • Step 10

    • I recommend to store these in your fridge. They will stay good for up to a month!
