Brownie

  • 1 tbsp of butter (unsalted or salted)

  • 4 tbsp granulated sugar

  • 1 tbsp egg white

  • 1&½ tbsp vegetable oil

  • 3 tbsp All-purpose flour

  • ⅛ tsp baking powder

  • 3 tbsp cocoa powder

  • 1/4 tsp vanilla extract

  • Pinch of salt

Glaze

  • 3 tbsp powdered sugar

  • 2 tsp cocoa powder

  • 2 tsp heavy cream


Why measure in grams?

If you ask any bakery how they measure, most will say they measure in grams. Measuring by weight is more reliable for desserts because some recipes don’t specify if you should pack your ingredients and do not take into account how different people measure their ingredients.

A common mistake people make in measuring ingredients is when measuring brown sugar. Brown sugar is clumpier than normal sugar because it is mixed with molasses. 100 grams of white sugar is equivalent to 100 grams of packed brown sugar—though most people don’t pack their brown sugar the same way, so you will most likely not get the same measurement unless using a scale.

Measurements In Grams:

Brownie

  • 15 grams of butter (unsalted or salted)

  • 50 grams granulated sugar

  • 8 grams egg white

  • 20 grams vegetable oil

  • 24 grams All-purpose flour

  • ⅛ tsp baking powder

  • 22 grams cocoa powder

  • 1/4 tsp vanilla extract

  • Pinch of salt

Glaze

  • 38 grams powdered sugar

  • 5 grams cocoa powder

  • 10 grams heavy cream

 

Kitchen Equipment

  • Stand mixer with paddle attachment OR medium sized bowl with a rubber spatula

  • parchment paper

  • 3x3 square pan


 

Instructions:

  • Step 1

  • Pre-heat oven at 350 degrees Fahrenheit.

  • Add butter and sugar in a small bowl.

  • Step 2

  • Mix in egg white and vegetable oil until well combined with butter-sugar mixture.

  • Fold in dry ingredients—All-purpose flour, cocoa powder, and baking powder.

  • Step 3

  • Lastly, mix in vanilla extract and pinch of salt.

  • Step 4

  • Grease a tiny square pan and add in brownie batter. Bake for 16-18 minutes. Let this chill while you prepare your topping.

  • Step 5

  • Glaze: Mix in powdered sugar, cocoa powder, and heavy cream until it forms a smooth chocolate mixture.

  • Step 6

  • Spread glaze across brownie and eat fresh or store in air-tight container for up to 8 days!
