Dough

  • 5 strawberries

  • 5 tbsp honey

  • 2-scoops (1/2 cup) protein powder

  • 1 & 1/2 cup old-fashioned oats

  • 1 tsp vanilla

  • 1 tsp strawberry extract

  • 2 tbsp milk (I used almond!)

Coating

  • 1 & 1/2 cup white chocolate

  • 2 tbsp matcha powder

Why measure in grams?

If you ask any professional baker how they measure ingredients, chances are they’ll say: by weight, specifically in grams. That’s because weight is far more accurate than volume, especially for baking. Measuring by cups can vary depending on how someone packs or scoops, and not all recipes clarify those details.

One of the most common measuring mistakes? Brown sugar. It’s denser and stickier than white sugar thanks to the molasses. While 100 grams of white sugar is the same as 100 grams of packed brown sugar, people pack brown sugar very differently—so unless you’re using a food scale, your results can be way off.

Measurements In Grams:

Dough

  • 35 grams strawberries

  • 100 grams honey

  • 2 scoops (30-50) grams protein powder

  • 120 grams old-fashioned oats

  • 4 grams vanilla

  • 4 grams strawberry extract

  • 30 grams milk (I used almond!)

Coating

  • 255 grams white chocolate

  • 4-6 grams matcha powder

Kitchen Equipment

  • Stand mixer with paddle attachment OR medium sized bowl with rubber spatula

  • 2 tbsp cookie scooper


 

Instructions:

  • Step 1

  • Blend up strawberries until there are little to no chunks left (this makes strawberry puree!).

  • In a medium-sized bowl, mix together the strawberry puree and honey.

  • Step 2

  • Mix vanilla extract and strawberry extract.

  • Step 3

  • Add blended oats & protein powder into the wet mixture. Mix until you get a thick and dry dough.

  • Step 4

  • Slowly add milk until desired consistency.

  • Step 5

  • Using a 2 tbsp cookie scooper, scoop balls of dough and roll into your hands to smooth them.

  • Place cookie dough balls in the freezer for 30-45 minutes.

  • Step 6

  • Melt white chocolate in 30-second intervals (mixing between each) until fully melted. Mix in matcha powder until fully combined.

  • Individually coat each strawberry ball in the chocolate and place back in the fridge to cool for another 15 minutes.

  • Eat fresh or store in a chilled environment for up to 14 days!
