Dough
8 small pitted dates (or 4 - 5 medjool dates) + 1/3 cup warm water
5 tbsp honey
2 tsp vanilla extract
1 tsp peppermint extract
2-scoops (1/2 cup) protein powder
1 cup old-fashioned oats
5 tbsp cocoa powder
pinch of salt
1/4 cup milk
1-2 crushed candy canes
Coating
1 & 1/2 cup semi-sweet chocolate

Why measure in grams?
If you ask any bakery how they measure, most will say they measure in grams. Measuring by weight is more reliable for desserts because some recipes don’t specify if you should pack your ingredients and do not take into account how different people measure their ingredients.
A common mistake people make in measuring ingredients is when measuring brown sugar. Brown sugar is clumpier than normal sugar because it is mixed with molasses. 100 grams of white sugar is equivalent to 100 grams of packed brown sugar—though most people don’t pack their brown sugar the same way, so you will most likely not get the same measurement unless using a scale.

Measurements In Grams:
Dough
70 grams pitted dates + 80 grams warm water
100 grams honey
6 grams vanilla extract
4 grams peppermint extract
32 grams protein powder
80 grams old-fashioned oats
38 grams cocoa powder
pinch of salt
60 grams milk
1-2 crushed candy canes
Coating
255 grams semi-sweet chocolate

Kitchen Equipment
Stand mixer with paddle attachment OR medium sized bowl with rubber spatula
2 tbsp cookie scooper
Instructions:
Step 1
Add pitted dates, honey, and warm water to a blender. Let the pitted dates soften in the water for 5 minutes before blending up until a smooth caramel consistency forms.
Step 2
In a medium-sized bowl, mix your date-caramel with vanilla and peppermint extract.
Step 3
Blend up old fashioned oats until they turn into a powder.
Add blended oats, protein powder, cocoa powder, and salt into mixing bowl and mix until you get a thick and dry dough.

Step 4
Slowly mix in milk until dough is nice and soft.
Crush a couple candy canes and mix them in dough (optional).
Step 5
Using a 2 tbsp cookie scooper, scoop balls of dough and roll into your hands to smoothen them. Place cookie balls in the freezer for 30-45 minutes.
Step 6
Melt semi-sweet chocolate until smooth.
Individually coat each cookie ball in the chocolate (sprinkling on candy cane chunks before they dry) and place back in fridge to cool for another 15 minutes.
Step 7
Eat fresh or store in a chilled environment for up to 14 days!
