Cookie Dough

  • 1/4 cup peanut butter

  • 2 tbsp honey

  • 1 scoop (1/4 cup) protein powder

  • 3/4 cup old-fashioned oats

  • 1 tsp vanilla

  • 3 tbsp milk (I used almond!)

  • 2 tbsp mini chocolate chips / chunks

Brownie Dough

  • 1/4 cup peanut butter

  • 2 tbsp honey

  • 3 tbsp cocoa powder

  • 1 tsp vanilla (optional)

  • 1/4 cup milk

Coating

  • 1 cup semi-sweet chocolate

Why measure in grams?

If you ask any bakery how they measure, most will say they measure in grams. Measuring by weight is more reliable for desserts because some recipes don’t specify if you should pack your ingredients and do not take into account how different people measure their ingredients.

A common mistake people make in measuring ingredients is when measuring brown sugar. Brown sugar is clumpier than normal sugar because it is mixed with molasses. 100 grams of white sugar is equivalent to 100 grams of packed brown sugar—though most people don’t pack their brown sugar the same way, so you will most likely not get the same measurement unless using a scale.

Measurements In Grams:

Cookie Dough

  • 60 grams peanut butter

  • 40 grams honey

  • 16 grams protein powder

  • 60 grams old-fashioned oats

  • 3 grams vanilla

  • 45 grams milk (I used almond!)

  • 30 grams mini chocolate chips / chunks

Brownie Dough

  • 60 grams peanut butter

  • 40 grams honey

  • 16 grams protein powder

  • 60 grams old-fashioned oats

  • 21 grams cocoa powder

  • 3 grams vanilla (optional)

  • 60 grams milk (I used almond!)

Coating

  • 170 grams semi-sweet chocolate

Kitchen Equipment

  • Stand mixer with paddle attachment OR medium sized bowl with rubber spatula

  • 2 tbsp cookie scooper


 

Instructions:

  • Step 1

  • Cookie dough mixture begins by mixing together peanut butter, honey, and vanilla in bowl 1.

  • Brownie dough mixture begins as well by mixing together peanut butter, honey, and vanilla in bowl 2.

  • Step 2

  • Combine all oats in a blender and blend up oats until it turns into a powder.

  • Split blended oats evenly into each bowls.

  • Then in bowl 1 add protein powder into mixture. Mix until you get a thick and dry dough.

  • In bowl 2 add protein powder and cocoa powder into mixture. Mix until you get a thick and dry dough.

  • Step 3

  • Next, mix in the milk into both bowls until dough is nice and soft.

  • Then for cookie dough mixture gently fold in the mini chocolate chips.

  • Step 4

  • Using a 1 tbsp cookie scooper, scoop one portion of cookie dough and one portion of brownie dough and roll them together in your hands until smooth.

  • Step 5

  • Place brookie balls in the freezer for 30-45 minutes.

  • Step 6

  • Melt semi-sweet chocolate until smooth.

  • Individually coat each brookie ball in the chocolate and place back in fridge to cool for another 15 minutes.

  • Step 7

  • Eat fresh or store in a chilled environment for up to 14 days!
