Frosted Dirty Chai Latte Cookies

These Dirty Chai Latte Cookies are basically autumn in cookie form. Spiced with warm chai flavors paired with a subtle espresso kick for that “dirty chai” flavor we all love. Soft, chewy, and perfectly spiced, they’re like your favorite cozy coffeehouse drink, but in handheld cookie form. Perfect with a mg of tea, coffee, or just for sneaky midafternoon snacking, these cookies will have you reaching for seconds (and thirds!) without even thinking about it!

Decorate Your Way

One of the best parts about these dirty chai latte cookies is that there is no right way to decorate them. Go all out with a piping bag and your favorite tip for a bakery style swirl, keep it simple with a plastic bag snipped at the corner, or just spread the frosting on with a spoon and call it a day. Topping wise, anything goes, cinnamon sticks, cookie crumbles, cinnamon sugar, or whatever you have hiding in your pantry. These cookies are made to be customized, a little messy, and totally fun, which honestly just make them taste even better!

Our friend is all about chai but doesn’t really like coffee, while my sister and I basically run on it. So, when we heard about a dirty chai latte, chia tea with a shot of espresso, we knew we had to try it… in cookie form, of course! Turns out, it is way simpler than you’d think, and these cookies perfectly balance the warm, spiced chai flavors with that subtle coffee kick we love. It’s basically a little coffeehouse magic you can hold in your hand!

Why I Measure in Grams (and You Might Want To, Too)

If youโ€™ve ever made the same recipe twice and gotten two totally different results, the measuring method is often the reason.

Professional bakeries almost always measure by weight, not volume. Measuring cups leave room for inconsistencyโ€”especially with ingredients that pack differently depending on how you scoop or pour them. A scale removes all of that guesswork.

One of the biggest offenders is sugar. Different sugars (and even the same sugar measured by different people) can vary wildly in volume, but 100 grams is always 100 grams. Measuring by weight gives you repeatable, bakery-consistent results and cuts down on extra dishes at the same time.

A food scale is one of the best (and most affordable) investments you can make for your kitchen if you love baking and want your recipes to turn out exactly the same every time.

Ingredients To Prepare

Before baking, take a few minutes to gather the ingredients below and to ensure that they are soft, chewy, with the perfect Chai flavor!

  • Butter (salted or unsalted)
  • Granulated Sugar
  • Brown Sugar
  • Egg
  • Vanilla Extract
  • All-Purpose Flour
  • Baking Soda
  • Baking Powder
  • Chai Spice
  • Powdered Sugar
  • Heavy Cream
  • Ground Coffee Beans

Once you have all of the ingredients ready to go, you’re officially set up for Dirty Chai Latte Cookie success. I always recommend measuring everything out ahead of time so the process is smoother, and you can focus on making the best cookies possible!

Frosted Dirty Chai Latte Cookies

Ingredients

Cookie Dough
  • 1 cup butter
  • 1/3 cup granulated sugar
  • 3/4 cup brown sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 2 3/4 cups All-Purpose Flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 3 tbsp chai spice
Frosting
  • 1 cup butter
  • 3 cups powdered sugar
  • 3 tbsp heavy cream or 2 tbsp milk
  • 2 tsp vanilla extract
  • 1 tbsp ground coffee beans

Method

Step 1: Preheat
  1. Preheat your oven to 350ยฐF (convection). Line a baking sheet with parchment paper and set aside.
Step 2: Cream butter & sugar
  1. In a stand mixer fitted with a whisk or paddle attachment, beat the room-temperature butter, granulated sugar, and brown sugar for 1โ€“2 minutes, until pale and off-white. Add the egg and vanilla extract and mix until fully combined.
Step 3: Add dry ingredients
  1. Add the all-purpose flour, baking powder, baking soda, and chai spice. Gently fold or mix on low just until the dough comes togetherโ€”avoid overmixing.
Step 4: Scoop & bake
  1. Scoop 1/3 cup portions of cookie dough and place them onto the prepared baking sheet. Bake for 11โ€“12 minutes, or until edges are set and centers look soft. For perfectly round cookies, use a round bowl, cup, or cookie cutter to gently swirl around each cookie right after baking. Let cookies rest on the baking sheet for 10 minutes before transferring.
Step 5: Make frosting
  1. In a stand mixer, beat the butter until off-white. Gradually add powdered sugar and mix until incorporated. Add heavy cream, vanilla extract, and ground coffee beans, then whip on high until fluffy and light.
Step 6: Frost & decorate
  1. Frost each cookie in a swirl design. Optional: top with cinnamon sticks for decoration.
Step 7: Store & enjoy
  1. Enjoy fresh, or store in a chilled environment for up to 8 days.
